Easy Rhubarb & Raspberry Crumble Bars

Not only are these crumble bars so easy to make. They’re also packed with delicious combination of pure oats, rhubarb and raspberry. They’re so great for meal prepping as they keep in an airtight container for days and they’re also gluten free, dairy free, vegan and vegetarian friendly.

Ingredients

  • 1 Cup of pure/gluten free oats
  • 1 Cup of oat flour
  • ½ Cup of coconut sugar
  • 1 ¼ Tsp of baking powder
  • ½ Tsp of sea salt
  • 1 Tsp of cinnamon
  • ½ Cup of coconut oil, melted
  • 1 Cup of Easy Rhubarb;Raspberry Compote

Instructions

  • Preheat the oven to 180°C  and line a small baking tray with parchment paper
  • In a large mixing bowl mix all of the dry ingredients
  • Stir in the coconut oil until combined
  • Evenly transfer 1 cup of the mixture lined baking tray and be sure to tightly pack it, pressing in well at the edges and bake for 10 minutes (allow to cool slightly)
  • Once the base has cooled, add the compote and top with the remaining oat mixture 
  • Bake for 20-25 minutes and allow to cool and set, enjoy!
