Easy Coconut Vanilla Chia Pudding
This is a delicious recipe with hints of vanilla and coconut. It can be enjoyed for breakfast or as a beautiful healthy dessert. It’s great for meal planning as it keeps in the fridge for 3-4 days so great for those who meal plan.

- ½ Cup of chia seeds
- 2 Tbsp of honey or agave syrup
- 1 Tbsp (15g) of vanilla extract
- 1 Tin (400ml) of coconut milk
- ½ Cup of desiccated coconut
- Fruit for Topping
To a mixing bowl add the chia seeds, coconut milk, honey/agave and vanilla extract
Stir to combine
Stir again and transfer to a jar or glass
Top with the coconut and fruit of your choice, enjoy!
