Easy Coconut Vanilla Chia Pudding

This is a delicious recipe with hints of vanilla and coconut. It can be enjoyed for breakfast or as a beautiful healthy dessert. It’s great for meal planning as it keeps in the fridge for 3-4 days so great for those who meal plan.

  • ½ Cup of chia seeds
  • 2 Tbsp of honey or agave syrup
  • 1 Tbsp (15g) of vanilla extract
  • 1 Tin (400ml) of coconut milk
  • ½ Cup of desiccated coconut
  • Fruit for Topping


  • To a mixing bowl add the chia seeds, coconut milk, honey/agave and vanilla extract
  • Stir to combine
  • Stir again and transfer to a jar or glass
  • Top with the coconut and fruit of your choice, enjoy!
