Such a perfect, light and easy snack recipe with the perfect combination of fruit and nuts. It’s also got the added bonus of being gluten free, dairy free, vegan and vegetarian friendly

Ingredients

Strawberry & Pistachio 

  • 2 Rice cakes
  • 4 Tbsp of almond butter
  • 2 Large Strawberries
  • 8 Shelled Pistachios

Banana & Pumpkin Seed

  • 2 Rice Cakes
  • 4 Tbsp of almond butter
  • 6 Slices of banana
  • 2 Tbsp of pumpkin seeds

Instructions

  • Layer each rice cake with 2 tablespoons of almond butter (I use Meridian)
  • To layer up each rice cake with the fruit and top with nuts and seeds
