In a small bowl add the chia seeds and 2 ½ tablespoons of water and leave to gel
To a pot add your quinoa and 2 cups of water, bring to the boil and then reduce to a low simmer for 8-10 minutes or until all of the water has been absorbed (keep an eye on it stir continuously)
Once the quinoa is ready set it aside to cool
To a blender add your avocado and spinach and blend until smooth
Add the almond flour and blend to combine
Transfer the spinach and avocado mixture to a large mixing bowl and add the quinoa
Add the gelled chia (this acts as a binding agent)
Stir to combine all of the ingredients
Using your hands, mould all of the ingredients into balls (you can make 20 small or 10 large ones, it’s totally up to you)
Line a baking tray with parchment paper and transfer them over
Bake at 180 ℃ for 20 minutes or until slightly browned (do keep an eye on them as each oven is different)
