Easy Green Vegetable, Coconut & Ginger Soup
This recipe is a great way to pack in valuable nutrients with pure and delicious ingredients. It’s also delicious and really easy to make. Gluten free, dairy free, vegan and vegetarian friendly.

- 1 Tablespoon of coconut oil
- 1 Large white onion, peeled and diced
- 1 Large courgette, chopped
- 2 Cups of celery, chopped
- 1 Large apple, chopped
- 1 Teaspoons of cumin
- 1 Tablespoon of ginger
- 1 Handful of coriander leaves
- 4 Cups of vegetable stock (I use x2 Knorr gluten free vegetable stock pots and 4 cups of boiling water)
- 4 Handfuls of fresh kale
- 400ml Tin of coconut milk (I use the Amoy one)
To a large saucepan your coconut oil and heat on a medium heat
Add your onions and sauté until lightly browned
Add the courgette, celery, onion and apple to the pot and stir
Add the cumin, ginger, coriander and stir to combine
Add the vegetable stock, stir, bring to the boil and leave to simmer for 10-15 minutes
Add the kale and stir
Add the coconut milk and continue to simmer for another 5-6 minutes
Remove from the heat and blend using an immersion (stick) blender (keep it chunky as it leaves an extra bite)
