Easy Honey Roasted Carrot Hummus
If you’re looking for a healthy snack, this delicious roasted carrot hummus does the job. It’s so versatile as a dip with vegetables or wholegrain crackers, in wraps or sandwiches or in your salad bowls. It’s also naturally gluten free, dairy free, vegan and vegetarian friendly.

- ½ Can of chickpeas, drained and rinsed
- 225g of carrots, finely chopped
- 2 Tablespoons of honey
- ¼ Cup of tahini
- 1 Teaspoon of paprika
- Salt & pepper for seasoning
- 5 Tablespoons of extra virgin olive oil
Preheat the oven to 180°C
Line a baking tray with tinfoil, evenly spread the carrots, drizzle with 2 tablespoons of the oil and the honey, leave to roast for 20 minutes
Remove the carrots and allow them to cool
To a blender add the chickpeas, cooled carrots, tahini, paprika, salt & pepper, 3 tablespoons of extra virgin olive oil and the water
Blend until smooth, adding small amounts of water if needed
Serve with chopped vegetable sticks, wholewheat crackers, rice cakes, in wraps/sandwiches or in a salad
