Easy Orange Overnight Oats
This is a refreshing and delicious alternative to your regular overnight oats. Bursting with citrus flavours it’s also really healthy as the from the orange helps to slow the release of the sugar from the oats whilst also helping to stabilise blood sugar levels

Servings: 1 Large or 2 small 10
- 1 Cup of Gluten Free Oats
- 1 Tablespoon of Chia Seeds
- ½ Teaspoon of Cinnamon
- 1 Teaspoon of Vanilla Essence
- ¼ Cup Chopped Walnuts
- 1 Cup of Coconut Milk
- 1 Cup of Freshly Squeezed Orange Juice
- Zest of One Orange
Mix all of the ingredients in a bowl (leave a little orange rind for the topping)
Transfer to 1 large or 2 small jars and leave overnight
Top with remaining orange rind and enjoy!
