Easy Nutty Banana Bread
This is such an easy bread recipe with a beautiful combination of bananas and nuts. Not only is it a great way to use up your ripe bananas it’s great for breakfast, a healthy snack or for recovery post training.

Servings: 1 Loaf
Dry ingredients
- ½ Cup of coconut flour
- ¾ Cup of almond flour
- 1 Teaspoon of baking soda
- 1 Teaspoon of cinnamon
Wet ingredients
- 2 Ripe bananas, mashed
- 3 Eggs
- 2 Teaspoons of vanilla extract
- ¼ Cup of maple syrup/agave
- 2 Tablespoons of coconut oil, melted
Nut Mix
- ½ Cup of walnuts
- ¼ Cup of pecans
Topping
- 1 Banana halved
- 3 Walnuts halved
- 3 Pecans halved
Preheat your oven to 180℃ and prepare your bread tin by lining with parchment paper or silicon bread mould (I love the silicon bakeware as it’s non-stick)
In a large bowl add your dry ingredients and stir to combine
In another bowl add your wet ingredients and whisk to combine and remove any lumps
Slowly add the wet ingredients to the dry ingredients, stirring to combine
Top with the banana halves and nuts and bake for 45-50 mins (test with a skewer, if it comes out clean then it’s ready
Leave to cool well before removing from the tin and serve, enjoy
