Easy Nutty Banana Bread

This is such an easy bread recipe with a beautiful combination of bananas and nuts. Not only is it a great way to use up your ripe bananas it’s great for breakfast, a healthy snack or for recovery post training.

Ingredients

Dry ingredients

  • ½ Cup of coconut flour
  • ¾ Cup of almond flour
  • 1 Teaspoon of baking soda
  • 1 Teaspoon of cinnamon

Wet ingredients

  • 2 Ripe bananas, mashed
  • 3 Eggs
  • 2 Teaspoons of vanilla extract
  • ¼ Cup of maple syrup/agave
  • 2 Tablespoons of coconut oil, melted

Nut Mix

  • ½ Cup of walnuts
  • ¼ Cup of pecans

Topping

  • 1 Banana halved 
  • 3 Walnuts halved
  • 3 Pecans halved

Instructions

  • Preheat your oven to 180℃ and prepare your bread tin by lining with parchment paper or silicon bread mould (I love the silicon bakeware as it’s non-stick)
  • In a large bowl add your dry ingredients and stir to combine
  • In another bowl add your wet ingredients and whisk to combine and remove any lumps
  • Slowly add the wet ingredients to the dry ingredients, stirring to combine
  • Top with the banana halves and nuts and bake for 45-50 mins (test with a skewer, if it comes out clean then it’s ready
  • Leave to cool well before removing from the tin and serve, enjoy
