Easy Oaty Pumpkin Bars

Made with the most delicious combination of fresh pumpkin, pumpkin spice and oats these bars are perfect for breakfast, as a healthy snack or treat. They’re also gluten free, vegan and vegetarian friend

Ingredients

  • 1 Cup of oat flour (ground oats) – gluten free if needed
  • 1 ½ Cups of oat flour
  • 1 Cup of coconut milk
  • ½ Cup of pumpkin puree See my Pumpkin Puree recipe here
  • ½ Cup of maple/agave syrup
  • ¼ Cup of coconut oil melted
  • 1 Egg or us egg replacer (1 Tablespoons of  ground flaxseed & 2 ½ Tablespoons of water)
  • 1 Teaspoon of vanilla extract
  • 2 Tablespoons of chia seeds
  • 1 Teaspoon of pumpkin spice mix  See my Pumpkin Spice blend here
  • ¼ Teaspoon of baking soda
  • ½ Teaspoon of baking powder
  • ¼ Teaspoon of Salt 

Instructions

  • Preheat the oven to 180∞Celcius and line a small baking tray with parchment paper
  • In a large bowl add the, pumpkin puree, coconut milk, coconut oil, maple syrup, egg/egg replacer, vanilla extract and stir to combine
  • Add the oats, oat flour, chia seeds, pumpkin pie spice mix, baking soda, baking powder and stir until combined
  • Place in the oven for 35 minutes, checking mid-way, if browning too quickly place some tin foil on top and continue to bake 
  • Allow to cool, slice into bars and enjoy (they will last really well in the refrigerator for 3-4 days and can be frozen also)
  • Tip: Wrap each bar individually to take them with you on the go
