Easy Tomato & Basil Soup
With the purest ingredients this fresh and tasty soup is perfect for a lunch or light meal. This is a great recipe for meal planning as you can make it up in batches. it’s also naturally gluten free dairy free, vegan & vegetarian friendly

- 2 Tablespoons of extra virgin olive oil
- 1 Large onion, chopped
- 2 Cloves of garlic, crushed
- 8 Cups/4 Tins of chopped tomatoes
- 2 Cups of basil
- Salt & pepper for seasoning
Heat the olive oil in a large saucepan, add the onions, garlic and sautee for 5 minutes until slightly browned
Add the tomatoes and cook until softened and slightly reduced 5-6 minutes
Stir in the basil and cook for a further 2 minutes
Remove from the heat and blend with an immersion/stick blender or transfer to a jug blender until smooth
Return to the heat for a another 2-3 minutes to reheat, serve and enjoy!
