Easy Strawberry Tiramisu
Such light and delicious dessert made with the purest ingredients. It’s also great for prepping in advance. Gluten free, vegan and vegetarian friendly!

Base
- ¼ Cup of dates, pitted and chopped
- ¼ Cup of almonds, chopped
White Layer
- 1 Cup of cashews, soaked for 1 hour
- ¾ Cup of coconut milk (tinned)
Topping
- 2 Strawberries, halved
- 4 Small mint leaves
Place the base ingredients in a blender and blend until to you get a crumbly sticky crumb
Evenly pack the base layer in the bottom of 2 glasses
Place the white layer ingredients (cashews & coconut milk) in a blender and blend until smooth (add a little more coconut milk if needed)
Evenly spread half of the white layer into the glasses and freeze for 15 minutes and set the other half aside
Add the 8 strawberries to the blender, blend until smooth and evenly add the strawberry layer to the glasses and freeze for 15 minutes
Add the remaining white layer and freeze for 15 minutes
Top with the strawberries and mint and enjoy
Spread the pumpkin cheese mixture over the base and place back in the oven for 45 minutes
