Line a baking tray with parchment paper
To a blender add the oats, almonds, cinnamon, ginger and salt
To the oats mixture, add the dates, maple syrup, water, vanilla extract and blend until you get a soft dough
To a heatproof bowl add the chocolate chips and coconut oil and melt in the microwave for 1 minute
Roll the dough into balls and using a kebab skewer/tooth pick dip the balls into the chocolate and until totally coated and place on the baking tray, continue until all of the dough has been used up
Top each one with the gingerbread crumb
Place in the fridge for 20 minutes to set and enjoy!
