Easy Homemade Strawberry Compote
This is not only delicious but also a versatile recipe which can be used as a breakfast topping, on pancakes and on desserts. It’s also naturally gluten free, dairy free, vegan and vegetarian friendly.

- 2 Cups Fresh strawberries, stems removed and chopped
- 1/3 Cup Stevia/Xylitol
- 1/2 Cup Cold Water
- 1 Tablespoon Corn Starch
In a large pot add all of the ingredients except the corn starch, bring to the boil and then reduce to for 6-8 mins to allow the strawberries to soften
Add the corn starch and stir to combine, remain on the medium heat and stir continuously for a further 2 minutes
Mash strawberry mixture until you get a thick an almost smooth consistency
Serve warm or cold
