Frozen Dark Chocolate & Strawberry Cups

With a beautiful combination of chocolate and homemade strawberry compote. These little cups are not only delicious but full of nutritious antioxidants too. Perfect for a healthy dessert or treat. They’re also naturally gluten free dairy free, vegetarian and vegan friendly!

Servings: 6 Cups

Ingredients

  • 1 Cup/100g Dark chocolate/raw cocoa nibs
  • 3 Tablespoons Coconut oil
  • 24 Tablespoons Homemade Strawberry Compote See Recipe here
  • Optional: Freeze dried strawberries for topping 

Instructions

  • On a tray lay out 6 muffin cases (I use the silicone ones as they’re reusable)
  • In a heatproof bowl add half of the chocolate and half of the coconut oil, heat in the microwave for 1 minute, remove & stir until smooth
  • Place 3 teaspoons of the chocolate into each muffin case and place in the freezer for 10 minutes
  • Remove from freezer and place 4 teaspoons of the Homemade Strawberry Compote into each muffin case, place in freezer overnight
  • Remove from freezer, repeat step 2 & 3, top with freeze dried strawberries (if using) and freeze for 10 minutes 
  • remove and serve 

Notes

These can also be kept in the fridge once set for a non-frozen version
