Easy Citrus & Pomegranate Fruit Salad
A beautifully refreshing recipe. This works great as a recipe of healthy snack as grapefruit helps to stabilise your blood sugar levels. It’s also gluten free, dairy free, vegetarian and vegan friendly!

- 1 Whole grapefruit
- 2 Grapefruits, skin removed and chopped
- 2 Cups Pomegranate seeds
- 4 Mandarin oranges, broken into segments
Squeeze the juice of one of the grapefruit into a jug
To a large bowl add the chopped grapefruit, pomegranate seeds, mandarin orange segments and lightly toss to combine
Pour over the squeezed grapefruit juice and serve
