Easy Matcha & Spinach Muffins

Green in colour and green in nature, these muffins are not only delicious but super easy too. They’re also gluten free dairy free, vegetarian and vegan friendly!

Servings: 6 Large Muffins


  • 2 Cups Plain flour (gluten free if needed)
  • 2 Teaspoons Baking powder
  • ½ Teaspoon Baking soda
  • 2 Teaspoons Matcha Powder
  • ½ Teaspoon Salt
  • 4 Handfulls of Spinach 
  • ¾ Cup Almond Milk
  • 4 Tablespoons Honey/Agave
  • 2 Bananas, mashed
  • 2 Teaspoons Vanilla Extract


  • Preheat oven to 190℃ / 180℃ Fan
  • Mix all dry ingredients (flour, baking powder, baking soda, matcha, cinnamon and salt)
  • To a high speed blender, add half the spinach and the milk and blend until smooth
  • Add the remaining spinach and again blend until smooth
  • To the blended mixture add the mashed banana, vanilla extra and blend until smooth
  • Pour the wet mixture into the dry ingredients and stir well to combine
  • Prep a six well muffin tray/12 small muffin tray with muffin liners (there’s no need for liners if you’re using silicon trays)
  • Evenly spread the batter into the pre-prepared trays.
  • Bake for 18-20 minutes (checking towards the end), test with a skewer if the skewer comes out dry they’re ready
  • Allow to cool slightly and enjoy!
