Preheat oven to 190℃ / 180℃ Fan
Mix all dry ingredients (flour, baking powder, baking soda, matcha, cinnamon and salt)
To a high speed blender, add half the spinach and the milk and blend until smooth
Add the remaining spinach and again blend until smooth
To the blended mixture add the mashed banana, vanilla extra and blend until smooth
Pour the wet mixture into the dry ingredients and stir well to combine
Prep a six well muffin tray/12 small muffin tray with muffin liners (there’s no need for liners if you’re using silicon trays)
Evenly spread the batter into the pre-prepared trays.
Bake for 18-20 minutes (checking towards the end), test with a skewer if the skewer comes out dry they’re ready
Allow to cool slightly and enjoy!
