Easy Tuna Pasta Bake
This recipe is packed full of affordable ingredients, making it the perfect individual and family meals. It also contains lots of common store cupboard ingredients, such tuna, sweetcorn, penne and tinned tomatoes. Such an easy and quick recipe to prepare ahead of your busy work week.

- 1 tbsp oil to (grease the casserole dish)
- 300g penne pasta
- 2 x 400g tins chopped tomatoes
- 2 tbsp tomato puree
- 2 x 130g tins of tuna in water, drained
- 75g pitted olives (any colour or combination)
- 165g tin sweetcorn, drained
- 75g bread, roughly torn (a little bit stale or harder is better)
- 50g cheddar cheese, grated
Preheat oven to 200°C (180°C fan) or gas mark 6
Grease a casserole dish with the oil
Bring a large pan of salted water to the boil and cook pasta until just al dente.
Meanwhile, cook chopped tomatoes and tomato puree with some seasoning in a large pan over medium heat for 5min, stirring occasionally
Drain pasta thoroughly then add to tomato sauce along with the tuna, olives, sweetcorn and some seasoning
Spoon mixture into the prepared dish and press down firmly with a spoon. Sprinkle over the torn bread and grated cheese
Cook in oven for 30min until top is crunchy and golden
Remove from oven and leave to cool for 10min before carefully removing from the dish.
