Easy Cauliflower Base Pizza

This is such a versatile and healthy pizza recipe. With a cauliflower base it’s low in carbohydrates, grain free, gluten free, keto and vegetarian friendly along with being so easy to make.

Ingredients

  • 1 Large cauliflower
  • 1 Egg
  • 1 Cup Mozzarella cheese, chopped
  • 1 ½ Tbsp Coconut flour
  • ½ Tsp Garlic powder
  • 1 Tsp Mixed Italian herbs
  • ½ Tsp Salt
  • ½ Tsp Ground black pepper

For Topping

  • 2 Tbsp Tomato passata
  • ¾ Cup Mozzarella cheese 
  • 1 Tbsp Parmesan shavings
  • 1 Cup Rocket salad
  • ¼ Cup Pine nuts

Instructions

  • Preheat your oven to 200∞Celcius and line a baking tray/pizza tin with parchment paper
  • Wash the cauliflower, remove leaves and stalks & cut into florets
  • Pop the cauliflower in your blender and blend until you get a rice like consistency
  • Pop it in the microwave for 5-6 minutes to further soften and leave to cool slightly
  • Lay out a dishcloth/thin tea towel and transfer your cauliflower into the middle, gather the cloth in your hands, place bowl underneath and squeeze as much fluid as you possibly can out of the cauliflower (this probably the most important step)
  • Transfer to a large bowl and add all of the remaining ingredients (except the topping), stir to combine all the ingredients until you get a dough-like consistency
  • Spread on to your pan, pushing down to further bind it 
  • 8) Bake for 15-20 minutes (it should be a light golden brown colour) 
  • Remove and add your toppings (I added Parma ham too but you can keep it veggie if you like)
  • Bake for a further 6-8 minutes or until the cheese is nice and melted 
  • Allow cool slightly before serving (this allows the pizza to set a little more and enjoy!
