Easy Rhubarb & Raspberry Compote

- 2 Cups of diced rhubarb
- 1 Cup of raspberries
- Juice of 1 lemon
- Zest of one lemonĀ
- 2 Tsp of vanilla essence
- 2 Tsp of cornstarch
Add the rhubarb, raspberries, coconut sugar, lemon juice and zest to a saucepan at a medium heat.
Bring to the boil and then allow to simmer for 10-12 minutes
Add the corn starch and cook for a further 5 minutes.
Serve on yogurt, cereals or crumbles
