Easy Gingery Sesame Tofu Lettuce Wraps
This is such a light and tasty recipe. It’s not only bursting with flavour but healthy too. They work great as an easy lunch or as a main meal side dish. They’re also naturally gluten free, dairy free, vegan and vegetarian friendly

- 2 Cups of tofu, cubed
- 2 Teaspoons of extra virgin olive oil
- 1 Cup of carrot, chopped into sticks
- 3 Tablespoons of soy sauce
- 1 Teaspoon of sesame oil
- 1 Tablespoon of ground ginger
- 2 Tablespoons of honey/agave
- 2 Tablespoons of fresh lemon juice
- 2 Garlic cloves, crushed
- Iceberg lettuce leaves (They vary in size so as many as you need)
- 2 Spring onions, chopped
In a small bowl add the soy sauce, sesame oil, fresh lemon juice, garlic honey/agave and ginger and stir to combine
Add in the tofu and gently stir to coat
To a large pan heat the extra virgin olive oil and add your tofu mixture and fry for 8-10 minutes or until the tofu has browned
Add your carrots and fry for another 5-6 minutes
Lay out your lettuce leaves and evenly spread your tofu mixture across them
Top with the chopped spring onions and sesame seeds and enjoy!
