Easy Root Vegetable & Cranberry Tarte

This Is such an simple and budget friendly dish with a beautiful combination of root vegetables and cranberry. Suitable for vegetarians

For the Vegetables

  • 4 Medium sized carrots
  • 4 Medium sized parsnips
  • 3 Tablespoons of maple syrup
  • 2 ½ Tablespoons of extra virgin olive oil

For the Pastry

  • 1 Sheet of puff pastry 
  • 2 tablespoons of milk (dairy free if required)

For the Topping


  • Preheat the oven to 200℃ and line two baking trays with parchment paper
  • Wash and peel the carrots and parsnips and slice lengthways 
  • Spread evenly across 1 of the baking trays and drizzle with the olive oil and maple syrup and bake for 30 minutes
  • Spread the pastry across the second baking tray, brush with the milk and bake for 10 minutes
  • Remove the pastry, top with the pesto, evenly spread the vegetables on top and bake for a further 15 minutes
  • Top with the chopped parsley and dried cranberries and enjoy
