Easy Carrot, Coconut & Tomato Soup

This is such a delicious and healthy recipe. With a beautiful combination of carrot, Tomato and coconut, this soup is not only packed full of the purest ingredients but it’s also creamy, filling and super easy to make.

  • 2 Cups Carrots, peeled & chopped
  • 400 Grams Chopped tomatoes
  • 400 Ml Light Coconut Milk, tinned 
  • 1 Large Onion, diced
  • 1 Cups Vegetable stock
  • 2 Tbsp Olive oil
  • 1 Tsp Turmeric
  • 1 Tsp Parsley 
  • Salt & Pepper for seasoning


  • To a Large pot  add the oil and cook the onions and garlic approximately 5 minutes, add turmeric and salt 
  • Add the carrots and tomatoes and stir
  • Add the can of coconut milk, vegetable stock, stir and simmer for approximately 25-30 minutes or until carrots are soft.
  • Remove from heat. You can blend using an immersion blender or transfer to regular blender and blend until smooth.
  • Top with dried parsley and serve with wholegrain brown bread
