Easy Free From Quinoa Porridge

A beautiful alternative to porridge oats and higher in protein. With hints of coconut and almond it’s the perfect healthy breakfast. It’s also dairy free, gluten free, vegan and vegetarian friendly

Ingredients

Porridge

  • ¾ Cup Quinoa, uncooked
  • 2 Cups Coconut milk (carton not tin)

Topping

  • 2 Tbsp Maple syrup
  • 2 Tbsp Raisins
  • 2 Tbsp Almond nibs
  • 1 Tbsp Almond butter
  • 1 Kiwi Sliced

Instructions

  • Heat 2 cups of coconut milk in a saucepan and bring to a boil
  • Add quinoa and simmer on a low to medium heat, stirring continuously until the milk reduces (about 8-10 minutes)
  • Transfer to 2 bowls
  • Evenly with the raisons, almond nibs, maple syrup, kiwi & almond butter
