Easy Innocent Muffins

Not only are these muffins super easy they’re also innocent being low fat, low carbohydrate, free of grains,  gluten, milk as well as being keto and vegetarian. Both savoury and sweet they make a delicious on the go breakfast and healthy snack .
Servings: 12 Large Muffins

Ingredients

  • 400 Grams Ground almonds
  • 100 Grams Dried cranberries
  • 100 Grams Raisons
  • 300 Grams Carrots, finely grated in food processor
  • 450 Grams Bananas, mashed
  • 8 Eggs Eggs, whisked
  • 4 Tsp Baking powder
  • 2 Tsp Cinnamon 
  • 4 Tsp Vanilla extract
  • Zest of 1 Orange
  • Juice of ½ an Orange
  • 1 Tbsp Pumpkin seeds

Instructions

  • Preheat the oven to 180∞Celcius
  • Line your muffin tins(s) with large muffin cases (12) or small muffin cases (24)
  • To a large bowl add your ground almonds
  • Make a well in the middle, add your whisked eggs and stir
  • Add your bananas and stir 
  • Add your cranberries, raisons, carrot, baking powder, cinnamon, vanilla extract and stir to combine all of your ingredients
  • Evenly spread your mixture into your muffin cases and top with pumpkin seeds 
  • Bake in the oven for approximately 30 minute (be sure to check in with them at 20 minutes in case your oven differs). Test isfthey are are done with a toothpick, if it comes out clear you’re ready to go.
  • Leave to cool slightly on a baking tray and enjoy!
