Easy Tomato & Basil Soup

With the purest ingredients this fresh and tasty soup is perfect for a lunch or light meal. This is a great recipe for meal planning as you can make it up in batches. it’s also naturally gluten free dairy free, vegan & vegetarian friendly

Ingredients

  • 2 Tablespoons of extra virgin olive oil
  • 1 Large onion, chopped
  • 2 Cloves of garlic, crushed
  • 8 Cups/4 Tins of chopped tomatoes
  • 2 Cups of basil 
  • Salt & pepper for seasoning 

Instructions

  • Heat the olive oil in a large saucepan, add the onions, garlic and sautee for 5 minutes until slightly browned
  • Add the tomatoes and cook until softened and slightly reduced 5-6 minutes
  • Stir in the basil and cook for a further 2 minutes
  • Remove from the heat and blend with an immersion/stick blender or transfer to a jug blender until smooth 
  • Return to the heat for a another 2-3 minutes to reheat, serve and enjoy!
