Easy Veggie Salad

A light and fresh vegetable salad which is perfect as a light meal or side dish. It's also naturally gluten free, dairy free, vegan and vegetarian friendly

  • 2 Cups Rocket lettuce
  • 1 Large carrot, cut into match sticks
  • 1 Large celery stalk, cut into match sticks
  • 1 Large Cooked beetroot, cut into match sticks
  • ¼ Cup Olive oil 
  • ¼ Cup Balsamic vinegar
  • ¼ Cup Chopped parsley 
  • ¼ Cup of walnuts


  • Combine the rocket, carrot, celery and beetroot in a bowl 
  • Combine the olive oil and balsamic vinegar and drizzle over the salad
  • Top with the parsley and walnuts
