Easy Apple Cider Vinegar & Apple Overnight Quinoa

Have a perfect start to your morning with this easy, delicious and nutritious breakfast recipe. With the combination of apple cider vinegar and cinnamon it is antibacterial, antiviral, anti-fungal and anti-inflammatory as well as amazing for your digestive system and stabilising blood sugar levels. The quinoa also is a great source of plant based protein. Gluten free, dairy free, vegan and vegetarian friendly.

Ingredients

For the Quinoa

  • 1 Cup of quinoa
  • 2 Cups of water
  • ½ Cup of coconut milk (from the carton)
  • 3 Tablespoons of Greek or dairy free yogurt
  • 2 Tablespoons of goji berries
  • 1 Tablespoon of honey
  • 2 Tablespoons of desiccated coconut

For the Apple Cider Apples

  • 1 Green apple, chopped into cubes
  • 2 ½  Tablespoons of apple cider vinegar
  • ½ Teaspoon of cinnamon

For the Topping

  • 1 Tablespoon of desiccated coconut
  • 2 Tablespoons of goji berries
  • 1 Tablespoon of walnut

Instructions

  • To a saucepan add your quinoa and water, bring to the boil and reduce to a simmer for 8-10 minutes or until the quinoa has absorbed all of the water, leave to coo
  • To another saucepan add the apple, apple cider vinegar and cinnamon and simmer for 6-8 minutes or until the apple cider vinegar is reduced and apples softened, leave to cool
  • To a large mixing bowl add the cooled quinoa, coconut milk, yogurt, goji berries, desiccated coconut, honey, cooled apple mixture and stir to combine
  • Evenly transfer the mixture into 2 jars, pop the lids on and refrigerate overnight 
  • Remove from the fridge, top with desiccated coconut, goji berries and walnuts & enjoy!
