Easy Pumpkin Porridge Oats

Give your oats a flavoursome and nutritious boost with this delicious porridge oat recipe. With combinations of fresh pumpkin, pumpkin spice this warming breakfast recipe really hits the spot. As a bonus it’s also gluten free, dairy free, vegan & vegetarian friendly!

  • ½ Cup of porridge oats (gluten free if required)
  • 1 Cup of coconut milk
  • 1 Cup of fresh pumpkin puree See my Pumpkin Puree recipe here
  • Teaspoon of pumpkin spice blend See my Pumpkin Spice blend here
  • 2 Tablespoons of honey/agave syrup
  • 2 Tablespoons of almond butter
  • 1 Teaspoon of vanilla extract
  • ¼ Cup of pecans and flaked almonds for topping 


  • Add all ingredients to a saucepan (except the pecans and almonds) and stir until combined
  • On a medium heat for 5 minutes until it comes to a boil
  • Remove from heat, transfer to 2 breakfast bowls, top with the pecans and almonds and enjoy!
