Easy Coconut & Almond Chia Pudding

This is a delicious recipe which can be eaten as a breakfast but also makes a beautiful dessert and keeps in the fridge for 3-4 days so great for those who meal plan. This recipe is gluten, dairy-free, vegetarian & vegan friendly.

Servings: 1 Pudding

Ingredients

  • 45 Grams 3 Tablespoons of black chia seeds
  • 30 Grams 2 Tablespoons of honey or agave syrup
  • 15 Grams 1 Tablespoon of vanilla extract
  • 15 Grams 1 Tablespoon of almond butter
  • ¾ Cup Canned coconut milk
  • 10 Grams 2 Teaspoons of shredded coconut
  • 10 Grams 2 Teaspoons of flaked almonds

Instructions

  • ) Add chia seeds to a bowl
  • Stir the coconut milk and add to the chia seeds
  • Add the honey, almond butter, vanilla extra and stir to combine all ingredients
  • Leave to set for15-20 minutes
  • Stir again and transfer to a jar or glass filling approximately ¾ to the top, allowing space for your topping
  • Sprinkle your coconut and flaked almonds on top to finish and enjoy
